Factory Blueprint and Engineering Integration Advantages
- Optional Industry 4.0 PLC Automation: The entire continuous line can be managed via an industrial-grade PLC network. Sensors monitor water levels, oil temperatures, conveyor speeds, and freezing dynamics in real time, making the line fully optimized for AI data collection and remote diagnostic monitoring.
- Advanced Heating Options for Blanching & Frying: Thermal management is the heart of potato chips production. The blancher and fryer can be configured with four distinct heating systems. 1. Electric Heating. 2. Natural Gas Heating. 3. LPG (Liquefied Petroleum Gas) Heating. 4. Indirect Thermal Oil Heating. We help you choose the best option based on your local energy costs, infrastructure, and capacity requirements.
- Sanitary CIP-Ready Construction: Built entirely out of thick-gauge SUS304 stainless steel with smooth radius welds, the entire production line complies with strict food hygiene and safety regulations. The blanchers, fryers, and conveyors feature motorized hood lifters for easy, rapid Clean-In-Place (CIP) access.

Complete Potato Chips & French Fries Plant Solutions
1. Automated Hydro-Destoner & Rotary Washing Machine
Raw potatoes are discharged into a water flume or hopper. A vertical screw or cyclic hydro-destoner utilizes density differentials to separate heavy stones, clods, and metallic debris from the potatoes. The tubers then pass into a heavy-duty rotary drum washer where high-pressure water jets remove embedded soil.
2. Continuous Roller-Type Abrasive Peeling Machine
Potatoes move continuously into an advanced multi-roller peeling system. Equipped with high-grade carborundum/nylon abrasive rollers, the machine strips the skins smoothly. An integrated water flume flushes away peel waste instantly, keeping peeling efficiency above 98% while keeping structural flesh loss under 6%.
3. Precision Cutting & Sifting Machine
Cleaned potatoes are fed into an industrial centrifugal cutting machine. High-velocity rotational force pushes the potatoes through interchangeable alloy steel blade grids, slicing them into uniform strips (typically 7×7mm, 9×9mm, or 12×12mm). The cuts then pass over a rolling sliver remover that automatically sifts out short pieces, fragments, and starch debris to ensure strict product uniformity.
The uniform potato strips enter a continuous chain-driven hot water blanching machine. This system features dual-zone temperature controls (Zone 1: 70°C–80°C for sugar leaching; Zone 2: 85°C–95°C for enzyme deactivation). This precise thermal processing prevents enzymatic browning, removes excess reducing sugars to prevent over-darkening during frying, and modifies the starch structure for optimal texture.
5. Multi-Stage Continuous Air-Knife Dewatering Line
To prepare for high-temperature frying, the blanched fries pass over a high-frequency vibratory dewatering conveyor and then travel down a continuous modular mesh belt equipped with a sequence of overhead and under-belt high-velocity ambient air knives. This removes 99% of surface moisture, preventing oil splattering in the fryer, preventing oil hydrolysis, extending oil service life by up to 40%, and significantly lowering total energy usage.
6. Continuous Mesh-Belt Frying System with Dynamic Filtration
The dried strips are directly transferred into a continuous industrial fryer. The system features a dual-layer mesh belt to keep the fries fully submerged in oil at a precise temperature (175°C to 185°C). The fryer is coupled with a continuous self-cleaning paper-tape or disk oil filter that constantly extracts carbonized micro-particles, maintaining a low Acid Value (AV) and Total Polar Materials (TPM) in the frying oil.
Upon exiting the fryer, the hot fries pass over a high-frequency vibratory conveyor that strips off surface oils. Then, a series of food-grade cooling fans blow ambient air through the bed of fries, dropping the product temperature and setting the outer crispy crust before freezing.
The pre-cooled French fries are fed continuously into an advanced Fluidized Bed Individually Quick Frozen (IQF) tunnel freezer. Operating with a high-efficiency ammonia or Freon refrigeration compressor system, the tunnel blasts air at -38°C to -42°C from beneath the belt. This fluidizes the fries, ensuring they freeze individually within 15–20 minutes down to a core temperature of -18°C, preventing clumping and preserving internal cell structures perfectly.
The frozen fries exit the IQF tunnel directly into a bucket elevator feeding a 14-head electronic combination multi-head weigher. The system automatically calculates precise target weights (e.g., 1kg, 2.5kg, or 5kg wholesale bags), drops the product into a Vertical Form-Fill-Seal (VFFS) machine that forms bags from roll stock film, flushes them with Nitrogen gas to extend shelf life, heat-seals the pouch, and prints batch codes.
